Christopher Pyun and John Metz bring knowledge and flavor to the menu of Aqua blue Restaurant & Bar. A world-renowned chef, Pyun graduated the University of Rochester. Metz and Pyun met while earning degrees at the Culinary Institute of America. There, the two decided to partner and open their first venture, Hi Life kitchen and cocktails. Metz oversees the dining room, while Pyun heads up the kitchen. The two began their careers at some of the finest restaurants in New York such as Le Cirque, The 21 Club, Tribeca Grill, Montrachet, and Restaurant Daniel. Pyun worked with world-famous chef Daniel Boulud as enter métier at Restaurant Daniel and as a consultant for Cooking with Daniel Boulud. He also worked at Le Cirque, where he assisted the chef and sous chef in preparing extensive menus and daily specials, and as saucier at The Polo in the famous Westbury Hotel. Just before establishing himself in Atlanta, Pyun was executive chef and managing partner of The Green Room in Dallas, Texas. While there, Pyun was recognized nationally for his inventive cuisine. He was named “Chef to Keep Your Eye On” in Esquire, and D Magazine chose the restaurant as the “Best Reason to Go to Deep Ellum.” One of Pyun’s creations was even a featured “Dish of the Week” in the Culinary Currents column of Nation’s Restaurant News. He also appeared on The Food Network and CNN while at The Green Room. Now as chefs and co-owners of Aqua blue and Hi Life kitchen and cocktails, Christopher Pyun and John Metz are thrilling residents in the Atlanta area with cuisine that inspires and entraps even the hardest to please.
